*Recipes portioned for single serving Ingredients: 1/3 cup bulgur 1 cup cherry tomatoes 1/2 cup fresh parsley 1/2 small shallot 1 tablespoon red-wine vinegar 1 ounce goat cheese 2 tablespoons olive oil Sea salt and fresh ground pepper  Instructions: Boil one cup of water. In a heatproof bowl, mix bulgur with 1/4 teaspoon salt and the cup of boiling water. Cover and let stand until tender but slightly chewy. About 20-30 minutes.  Finely chop fresh parsley.
