*Recipes portioned for single serving


  • 1/3 cup bulgur
  • 1 cup cherry tomatoes
  • 1/2 cup fresh parsley
  • 1/2 small shallot
  • 1 tablespoon red-wine vinegar
  • 1 ounce goat cheese
  • 2 tablespoons olive oil
  • Sea salt and fresh ground pepper


  1. Boil one cup of water. In a heatproof bowl, mix bulgur with 1/4 teaspoon salt and the cup of boiling water. Cover and let stand until tender but slightly chewy. About 20-30 minutes. 
  2. Finely chop fresh parsley. Slice shallot into thin slices.  Here's a video explaining how to slice shallots.
  3. Drain bulgur in a fine mesh sieve, pressing to remove liquid. Return to bowl. Add tomatoes, parsley, shallot, vinegar and 2 tbsp of olive oil. Season with salt and pepper and toss. Top with cheese.
