Monday: Enchiladas & Fresh Tomatillo Salsa With White Rice


We’re bringing you a classic kind of Mexican street food and turning it into cuisine; trust us, it’s truly as flavorful as it looks. Overall, creating this dish is relatively simple. Get your rice going first, then start the process of slicing and dry marinating the chicken before chopping up your veggies. Once you lay your filling into the tortilla, you’ll top it off with farm fresh cheese (or queso fresco), roll it up, and drizzle on the salsa, which is made in-house with fresh local tomatillos. Once the enchiladas come out of the oven, plate up with your rice and the side of curtido (pickled veggies). They are more than a condiment, they’re a compliment. This is a plate of immense ease, and when you combine fluffy white rice with cilantro, pickled veggies, and powerhouse flavors of the enchiladas, it’s a beautiful thing: filling, satisfying, flavorful.
