Our pan-seared rockfish is paired with a delicious red pepper coulis—roasted red peppers skinned and deseeded until there’s nothing but a puree of roasted sweetness that’s a beautiful, bright red. The rice we’ve chosen to go along with this particular dish is a basmati rice, which is popular in India. It’s shorter and broader than other kinds of white rice with a slightly heartier flavor to it. The dish is also complimented by a garlicky, sauteed asparagus and a blend of herbs currently in season—parsley, thyme, and marjoram.
