Thursday: Tenderloin, Apple & Fig Compote, Roasted Fennel & Potatoes



Pork tenderloin doesn’t need much to help it tenderize, but we’re sending you a cut of meat that’s been marinated overnight with just a small amount of fresh, local apple cider for a hint of sweet and to get some of those acids working so there’s not shortage of flavor when it comes time to cook—and cooking this dish is incredibly easy since the potatoes, fennel, and pork all go into the oven. Top the dish with our in-house compote, made from tart, firm apple, dried figs, and walnuts, then drizzle on your pan juice made with dijon and apple cider for a delicious balance of sweet and sour that often goes so well with pork.
