Though these spices might come from the other side of the globe, we’ve blended together our very own version of yellow curry made of coriander, cinnamon, black pepper, and chili for an extremely flavorful and beautiful yellow sauce. The best part is that, apart from the rice, this is a one-pan dish: start with the potatoes, then add your beautiful vegetables—local onion, carrot, zucchini, summer squash, and so on. When the potatoes are almost done, add in your shrimp. Finish the dish off by softening the heat with a hearty dollop fresh and local yogurt.
