Tuesday: Sprouted Lentils, Italian Sausage & Autumn Vegetable Potage



This dish starts with organic, sprouted green lentils (grown not too far from here and certified by Tilth). When gently simmered for twelve minutes, these gems produce a tender, wholesome legume that offers a wonderful, nutty, savory, flavored broth which will become the base of your potage. With so much local and organic produce being harvested so late in the season (a positive gift from a lingering, wet winter), the companions to the lentils are organic onions, carrots, fennel, celery, garlic, and kale, along with a patch of spicy red pepper, should you want that extra spark and color. For the protein, we're offering a fresh local take on Andouille sausage that, when combined with the potage, satisfies all the senses.
