Wednesday: Steak Night: Denver Steak with Delicious Romesco Sauce



It’s Wednesday, and you know what that means: steak night! This week, we’re giving you thin, tender cuts of Denver steak; these cook quickly but have enough marbling for great tenderization and flavor. We’ve paired this steak with Romesco sauce, which is made with roasted peppers, tomatoes, almonds, and garlic to create a thick, coarse, and substantial, flavorful sauce. The steak is paired with basmati rice with scallions—a bit of spice to balance the sweetness of Romesco—and steamed snow peas. Since we love tomatoes so much, this dish is topped with cherry tomatoes for color and sweetness.
